Camping Season Has Begun

Camping Season Has Begun

Hooray…the camping season is finally here!  This past weekend Jen and I took the family up north to Carter Lake, CO.  While it wasn’t the most ‘off-the-beaten-path’ site around, it was a good first trip of the summer.  Since we are going camping three out of the next four weekends, it was nice to get the camper out  and make sure everything works (as well as stock up on the necessities).  We had a wonderful time and can’t wait to go on our next trip!

We arrived at our site around 5:00 on Friday evening and got the camp set up pretty quick.  We had a nice dinner of hot dogs and beans cooked over the fire, before busting out the marshmallows, graham crackers and chocolate for s’mores!!  The kids stayed up pretty late but all three of them hit a wall at around 9:30.  Jen and I stayed up extremely late – enjoying some red wine over the crackle of the campfire.

CJ was kind enough to wake the entire pop-up at 5:50 on Saturday morning!  Ugh.  After rolling around a bit, we all got up and had some potatoes and eggs for breakfast.  With our bellies full we decided to gather up the fishing gear and head over to the lake.  We found a nice little trail head that wove it’s way around the western shore of the lake, and we were able to pick a nice little spot to try and catch some fish.  It didn’t take long to realize we were going to come away empty-handed, but it was still a nice way to spend a morning.  After fishing, we headed in to Berthoud to grab some lunch – and little did we know they were having a parade in town that day, so not only did we have a nice lunch…but enjoyed a small-town parade at the same time!  The rest of the day we spent relaxing in our camper, playing games, and going on hikes around the campsite.  We had a great dinner making pizzas and chicken fajitas in our pie-irons before another round of s’mores/kiddos bedtimes/fire and wine.

We had such a wonderful weekend and we can’t wait to head up to the mountains in less than two weeks.  Here’s a few pictures of our trip…and I uploaded a lot more to our Flickr account.

Take care,
MJCE&CJ

Yea! A fun update. Looks like the kids had a great time, beautiful weather and location. What is a pie-iron???? Love the pictures and thanks for the update.

The kids did have a blast, although Cameron was WAY irritated that we didn’t catch any fish. :) A pie iron is like a sandwich maker that is cast iron. It has two sides and encases whatever you put inside it to make it like a hot pocket. Does that make sense? My favorite from this weekend was a tortilla with cheese, pepperoni and pizza sauce inside. YUM! You put it in the fire to cook, and turn it often. It is really fun! One time we even put pie crust with marshmallows, bananas and chocolate…HEAVEN!!! :)
